Green Bean Casserole

INGREDIENTS:

  • Non stick cooking spray
  • 1 tbsp olive oil
  • 1/2 lb sliced fresh mushrooms
  • 1 small onion, finely chopped
  • 1 lb fresh green beans, trimmed
  • 1 (10-3/4 oz) can low-fat, low-sodium
  • condensed cream of mushroom soup
  • 1/2 cup reduced-fat or light sour cream
  • 1/2 cup milk
  • 1/4 tsp ground black pepper
  • 3/4 cup canned French fried onions

DIRECTIONS:

  1. Preheat oven to 350º F.
  2. Heat oil in a large skillet over high heat. Add mushrooms and chopped onions; cook and stir over medium heat 3 minutes or until onions are crisp-tender. Stir in beans; cover. Cook over medium-low heat 4 minutes Remove from heat.
  3. Mix together the next 4 ingredients. Add to vegetable mixture; mix well. Pour into a 2 quart casserole sprayed with cooking spray.
  4. Bake 40 minutes or until heated through, top with French fried onions after 30 minutes.
